zucchini and italian herb frittata

Recipe Ingredients for italian frittata

3 eggs
4 egg whites
1/4 cup skim milk
1/4 cup fresh parsley
1/3 cup parmesan cheese
1/2 tsp basil
1/2 zucchini, chopped

Recipe Directions for italian frittata

  1. scramble eggs, egg whites, and milk

  2. mix in finely chopped parsley, basil and any other italian herbs of choice

  3. sautee zucchini in a skillet for a couple minutes

  4. add egg mixuture to skillet and stir breifly to mix in zucchini

  5. cook over medium heat about 8-10 minutes or until edges are set and only middle jiggles when the skillet is moved

  6. remove from stove top, top with parmesan, and bake at 350 to 400 degrees until middle is set.

  7. serve with tomato wedges sprinkled with parsley or italian herb seasoning

  8. optional: add a couple tblsp diced red, yellow, or green pepper
