Easy and yummy. Can make with 8 eggs as well. Add about 10 calories per serving if made with 8 eggs.

Recipe Ingredients for Italian Fritatta

7 eggs
1/2 cup ham, chopped
2 oz mushrooms, canned
1/4 cup spinach, frozen
1/3 cup diced tomatoes
1/2 tablespoon extra virgin olive oil
1/2 oz colby jack cheese, shredded
1 oz feta cheese

Recipe Directions for Italian Fritatta

  1. Saute ham, mushrooms and tomatoes in saucepan. Season with Italian Seasonings.

  2. Slightly beat eggs, add frozen spinach.

  3. Add eggs to veggies in sauce pan. Cook over medium heat, using a spatula to move egg under itself. (5 minutes)

  4. Finish in broiler for 1-2 minutes.
