Recipe Ingredients for Italian Eggplant Casserole

1 2/3 c spaghetti sauce
490 g eggplant
130 g tomato
125 g leek
200 g gouda cheese
4 cloves garlic
1/2 tsp salt

Recipe Directions for Italian Eggplant Casserole

  1. Slice and pre-boil the eggplant. Drain on paper towels. Slice tomatoes, leek and garlic. Layer all ingredients in a baking dish starting with some spaghetti sauce.

  2. Bake at 350 for one hour.
