Recipe Ingredients for Italian Eggplant Bake

1 eggplant
1/4 cup part skim ricotta cheese
6 oz shredded italian cheese blend
1 1/2 cups marinara sauce
1 egg white

Recipe Directions for Italian Eggplant Bake

  1. Slice eggplant into 1/2 inch thick slices. Salt both sides of each slice liberally, place under a weight and let sit for 30 minutes.

  2. Rinse salt from eggplant slices and place on a baking tray. Bake at 350 degrees for about 10-15 minutes or until tender.

  3. While the eggplant is baking, combine the egg white and the cheeses (reserve about 1-2 oz of the shredded cheese for topping). Add italian spices or crushed red pepper to taste; salt is not necessary!

  4. In a casserole dish, spread 1/3 of the marinara sauce, then 1/2 of the eggplant slices, then 1/2 of the cheese mixture. Repeat layers in this order, finishing with the last 1/3 of the sauce and the remaining shredded cheese.

  5. Bake at 350 degrees for about 20 minutes or until the cheese is starting to brown and the sauce is bubbling.
