Recipe Ingredients for Italian Egg Drop Soup

14 oz low sodium chicken broth
2 eggs
28 g parmesan cheese
14 oz water
2 chicken bouillon cubes
1 pinch of nutmeg
1 pinch of black pepper
1 pinch of parsley

Recipe Directions for Italian Egg Drop Soup

  1. Heat broth, water and bouillon over med-high.

  2. Scramble eggs with cheese, nutmeg and pepper.

  3. As broth comes to a boil, reduce to simmer and drizzle the eggs into pot in a slow stream by scooping eggs into broth with a fork. Drizzle the eggs in a circular motion, moving slowly.

  4. When the eggs are all incorporated in the broth, add the parsley and turn off heat.
