For the Crespelle:
5 large eggs
4 tbl oil, extra-virgin olive oil
1 1/2 cups water
1/3 tsp salt
1 1/2 tsp sugar
1 1/2 cups flour, all-purpose
4 tbl butter, melted

For the stuffing and baking of the Crespelle:
5 tbl butter
1 1/2 cups chopped onion, chopped
4 garlic cloves, peeled and crushed
1 1/2 tsp flour, all-purpose
1 1/2 lbs mushrooms, mixed, porcini, shitake, cremini, whi te
1 1/2 cups heavy cream
3 tbl parsley, fresh, chopped
2 cups grated cheese, freshly grated Pecorino Romano
