Italian Cold Pasta Salad Recipe

Inspired by having way too many random ingredients laying around the house, and trying to find a new way to incorporate some of them. Servings are large for a side dish, but Italians eat a lot! Can also be used as a great main dish for pasta enthusiasts.

Recipe Ingredients for Italian cold pasta salad

3 cups Rotini
1 cup Chick Peas
20 Pitted Black Olives
1 medium Roma Tomato
1 tbsp Parmesan Cheese
1 tsp Parmesan Cheese
3 cloves of Garlic
1 tbsp Olive Oil
1 pinch Dried Basil
1 pinch Garlic Powder
3 tbsp red wine vinaigrette

Recipe Directions for Italian cold pasta salad

  1. Cube the tomato, dice the garlic, and slice the olives into rings

  2. In a medium saucepan, boil salted water. Once boiling, add pasta and cook till Al Dente. Meanwhile, In a small sauce pan or skillet, heat 1 Tablespoon of Olive Oil, and add diced Garlic and cook till browned (This should be fairly fast, so watch out!) Strain the oil from the garlic.

  3. Once pasta is Al Dente, Strain and let cold water run over them for about a minute.

  4. In a large mixing bowl, combine the Olives, Chick Peas, Pasta, Garlic, Garlic Powder, Basil, Tomato, and Parmesan, and mix thoroughly. Place mixture in the refrigerator and allow to chill before serving.

  5. NOTE: A lot of this is optional. This is just the recipe i chose. Feel free to add or remove any vegetables you want, or include different sauces. The possibilities are endless!
