Excellent Dinner! (Note that the 125 grams refers to 1/2 cup of chunky veggie spaghetti sauce accounting for 45 calories per serving.)

Recipe Ingredients for Italian Chicken and Veggies

1/2 cup cherry tomatoes
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped zucchini
1/2 cup chopped mushrooms
2 tbsp sliced black olives
1 tbsp tomato paste
125 g
6 oz chicken
1/4 cup mozzarella

Recipe Directions for Italian Chicken and Veggies

  1. Combine Paste and Sauce.

  2. Combine Sauce mixture with all veggies.

  3. Spray casserole dish with pam and add veggies.

  4. Lay 6 oz chicken breast on top of veggies.

  5. Cover with foil.

  6. Bake for 1 hour on 400.

  7. Uncover and sprinkle cheese over and return to oven to melt cheese.

  8. Remove and enjoy!
