Italian egg drop soup with chicken and veggies

Recipe Ingredients for Italian Chicken & Spring Vegetable Soup

2 tsp olive oil
1 cup onion
1 cup carrot
3/4 cup celery
1 tsp oregano
2 tsp thyme
1 tsp bay leaves
1 tsp salt
8 cups chicken stock
1/2 cup lemon juice
1 tbsp lemon rind
2 cups asparagus
1 1/2 cups chicken, chopped
4 eggs
3/4 cup parmesan
4 tbsp cornmeal
3/4 cup parsley, chopped

Recipe Directions for Italian Chicken & Spring Vegetable Soup

  1. Soften onions, carrots, celery in oil.

  2. Add broth and lemon juice

  3. Add chicken and asparagus

  4. Bring to boil

  5. Combine eggs, cheese, cormeal, and parsley

  6. Temper egg mixture with soup

  7. Add egg mixture to soup slowly while stirring with a wooden spoon.
