Basic chicken soup, easily made with kitchen staples. Cut the calories by omitting the cream.

Recipe Ingredients for Italian Chicken Soup

5 oz Orzo dry pasta
1 tbsp olive oil
2 cups chicken breasts meat
4 1/2 cups low sodium chicken broth
1 1/2 cups carrots, chopped
2 tbsp onion, minced
1 tbsp garlic, minced
1 3/4 cup garbanzo beans, drained and rinsed
1 3/4 cup diced tomatoes
2 tbsp oregano, dried
1 tsp salt
1 tsp pepper
1/3 cup heavy cream

Recipe Directions for Italian Chicken Soup

  1. Poach the chicken in 1 cup broth for 15 minutes and shred.

  2. Cook pasta according to package. Rinse and toss with 1/2 tbsp olive oil.

  3. Using the pan and broth used to cook the chicken, cook the carrots with the diced onions, garlic and remaining olive oil for 10 minutes.

  4. Meanwhile, combine all other ingredients into a large pot along with the pasta.

  5. Bring to a boil.

  6. Add in carrots and items in the pan to the main pot.

  7. Simmer for 15 minutes. Keep the soup on low until ready to serve.

  8. Prior to serving, stir in the cream and mix to heat thoroughly.

  9. Serve with grated or shredded parmesan.
