Instead of four red peppers you can use any combination of green, red, and yellow. Chicken was entered in the ingredients because chicken sausage wasn't recognized. Use Barilla Tomato and Basil sauce. Bay leaves again, wasn't recognized in the ingredients.

Recipe Ingredients for Italian Chicken Sausage & Peppers (not hot)

510 grams Skinless Chicken breast
4 Red Peppers
2 large Onions
6 Garlic cloves
2 cups Tomato Sauce
4 tbsp Olive Oil
1 tbsp Balsamic Vinegar
1 tbsp Marsala Wine
1/2 cup Chopped Parsley
2 tsp Dry Oregano
1/4 tsp Salt
1/2 tsp Black Pepper
4 tbsp Grated Cheese

Recipe Directions for Italian Chicken Sausage & Peppers (not hot)

  1. Slice the sausage into 1 1/2 inch thick slices.

  2. Core and slice the peppers 1/2 inch thick.

  3. Slice the onions lengthwise, 1/2 inch thick.

  4. Peel garlic cloves and leave whole.

  5. Brown the sliced sausage in the olive oil. When the sausage is half done, add the whole garlic cloves and allow to brown in oil. (if garlic browns too rapidly, move to a cooler side of the pan)

  6. When brown, crush the garlic cloves into the oil with the tines of a fork.

  7. Add the peppers and onions and cook until edges of onions begin to brown.

  8. Deglaze the pan with the balsamic vinegar.

  9. Reduce heat and add the sauce, two bay leaves, and remaining ingredients except salt and pepper.

  10. Simmer over very low heat for 15-20 minutes.

  11. Last 5 minutes, adjust seasonings, adding salt and pepper to taste.

  12. Remove bay leaf and serve with your favorite bread. Since this dish is very soft, a freshly crusty bread goes best with it.

  13. For a special occasion, layer on a bit of Parmesan or mozzarella cheese and place under the broiler 2-3 minutes before serving.
