Italian Chicken Casserole Recipe

Paula Dean recipe - originally called for angel hair pasta but I used rotini. May be good with ground beef or turkey instead of chicken too. Originally called for 2 cups mozzarella but I used a bit more. Also, original recipe called for heavy whipping cream but I used light cream instead.

Recipe Ingredients for Italian Chicken Casserole

2 tbsp olive oil
1/2 cup chopped onion
3 garlic cloves
1 lb. chicken (cooked and diced)
29 oz. diced tomatoes
1 cup light cream
3 1/2 oz. cream cheese
2 1/2 cups shredded mozzarella cheese
8 oz. pasta (I used whole grain rotini)

Recipe Directions for Italian Chicken Casserole

  1. Preheat oven to 350 degrees; lightly spray a 9x13 baking dish or casserole

  2. In large skillet, heat olive oil over medium-high heat

  3. Add onion and garlic, cook 3 minutes or until tender.

  4. Stir in cooked chicken, tomatoes, and cream.

  5. Bring to boil over medium-high heat; reduce heat and simmer 10 minutes or until slightly thickened.

  6. Add cream cheese and 1 cup mozzarella cheese, cook, stirring constantly until cheeses are melted.

  7. Add pasta, tossing gently to coat.

  8. Spoon into prepared baking dish.

  9. Sprinkle evenly with remaining cheese.

  10. Bake 30 minutes.
