Made with half whole wheat flour and olive oil.

Recipe Ingredients for Italian bread with whole wheat flour

2 tbsp olive oil
2 tbsp brown sugar
1/8 tsp ground ginger
1 tsp salt
1 1/2 cups flour
1 1/2 cups whole wheat flour
1 package active dry yeast
2 tbsp cornmeal
1 cup water

Recipe Directions for Italian bread with whole wheat flour

  1. Dissolve yeast, sugar, and ginger in 110 degree water for 5 minutes until yeast foams. Add salt and half the flour, adding more white flour at first. Beat the mixture well. Then add 2 TBSP olive oil and remaining flour, and stir until stiff. Then knead for 10 minutes or so. Place in greased bowl, cover with plastic wrap, and let rise until twice the original size.

  2. Preheat oven to 400 degrees for 30 minutes. Stack two baking sheets (or a stone), and get them hot in the oven.

  3. Once the dough has risen, punch it down, and on floured survace shape into one or two loaves, first shaping into rectangle, then rolling up along the long side to make loaves. Pinch edges to seal and taper ends.

  4. Remove the stacked baking sheets from the oven, sprinkle with cornmeal, and place the dough on them. Slit the top of the dough in 4 or 5 places, 1/4 in deep. Minimize the amount of time the baking sheets are out of the oven.

  5. Place the baking sheets in the oven. Spray with water a couple of times during the first 10 minutes of baking. Total baking time is 20 to 25 minutes or until golden brown.
