Recipe Ingredients for Italian Bologna

1 Bacon, 1#, partially frozen and chopped
1/2 medium onion, chopped
1 Russet Potatoes,2-1/2 ? 3#
2 tbsp Italian Seasoning, crushed
1 tbsp Garlic Salt
28 oz Bologna, all beef, skin removed, cut into bite size pieces
1 oz Romano Cheese (optional)

Recipe Directions for Italian Bologna

While still partially frozen, slice bacon vertically, then chop into pieces, fry in a Dutch oven till crispy, removing about of the bacon fat. Add chopped onion. While the onion and bacon are cooking, peel potatoes. Quarter and slice potatoes thinly. Add potatoes to bacon/onion mixture when the onion is soft and transparent. Add the Italian Seasoning and Garlic Salt. Stir well to combine. While the potatoes cook remove the skin from Ring Bologna, cut into bite-sized pieces. When the potatoes are just about done, add Bologna and cook to heat through. Serve with a shake or two of grated Romano Cheese if desired. Recipe can be adjusted to make more or less depending on your family. Just add more potatoes or Bologna or less.
