Similar to minestrone with the addition of ground sirloin.

Recipe Ingredients for Italian Beef and Vegetable Soup

2 pounds 90% lean sirloin, ground
1 small onion
2 yellow squash
1 zucchini
28 ounces tomatoes, canned
4 small carrots
4 cloves garlic
2 tbsp olive oil
1 tbsp oregano
12 ounces whole wheat penne pasta
1 tbsp salt
1 tsp pepper

Recipe Directions for Italian Beef and Vegetable Soup

  1. Brown beef with garlic. Drain.

  2. Saute onions and carrots in olive oil until soft.

  3. Add chopped squash and zucchini, tomatoes, oregano, salt, pepper. Simmer for 10 minutes.

  4. Add pasta, beef,and enough water to cover all ingredients.

  5. Simmer for 30 minutes or until pasta is cooked.
