Recipe Ingredients for Italian Bean Soup

3/4 c cannellini beans
56 oz reduced-sodium chicken broth
1/4 tsp salt
1/2 tsp ground pepper
4 tsp olive oil
2 onions, chopped
2 carrots, chopped
2 celery stalks, chopped
2 garlic cloves, minced
28 oz tomatoes
3 zucchini, chopped
9 oz frozen cut green beans
2/3 c macaroni

Recipe Directions for Italian Bean Soup

  1. Soak the beans.

  2. Combine the beans, broth, salt, and pepper in a large pot; bring to a boil. Reduce heat and simmer, covered, until the beans are barely tender, about 1 hour.

  3. Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, carrots, celery, and garlic; cook, stirring frequently, until softened, about 5 minutes.

  4. Stir the vegetable mixture into the bean mixture; add the tomatoes with their juice, the zucchini, and green beans. Simmer, stirring occasionally, until the vegetables are tender, about 10 minutes. Stir in the pasta and cook until barely tender; about 10 minutes. Stir in the basil. Serve sprinkled with Parmesan.
