EASY and FAST Light and cool pasta salad for a side dish, great with cookouts. Better than those salads you get from your grocer's deli. Also, try substituting multi-grain or whole wheat pasta (bow-tie or farfalle) for a better for you carb!

Recipe Ingredients for Italian Basil Pasta Salad

14 1/2 ounce bow tie pasta
2 cups grape tomatoes
7 ounces fresh mozzarella cheese, cubed
1 medium yellow bell pepper, chopped
1 small red onion, chopped
1/2 cup banana peppers
2 1/4 ounce sliced ripe olives, drained
1/2 cup fresh basil leaves, thinly sliced
3/4 cup olive oil
3/4 cup red wine vinegar
1 garlic clove, minced
1 tsp salt
1/2 tsp pepper
1/4 tsp dried basil

Recipe Directions for Italian Basil Pasta Salad

  1. Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, tomatoes, cheese, yellow pepper, onion, pepper rings, olives and basil.

  2. In a jar with a tight-fitting lid, combine the olive oil, red wine vinegar, garlic, salt, pepper and dried basil; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 1 hour before serving. (we were too hungry to wait, so this last step is optional. It is definitely better if you wait, but not necessary)
