Prep time 20 minutes, Total time 35 minutes This is a wonderful one-dish meal. (We like to double or triple the spinach.) All ingredients listed below were Kroger brand products. 1/2 t Garlic Powder can be substituted for 2 garlic cloves.

Recipe Ingredients for Italian Baked Penne--Kroger Cookbook

16 oz Penne Rigate
1 lb Italian Sausage (Ground, mild)
1 c onion, chopped (can use frozen)
2 garlic cloves, crushed
8 oz white mushrooms, sliced
1/4 t black pepper
14 1/2 oz diced italian tomatoes (1 can)
29 oz crushed tomatoes (2 cans)
3 c spinach, roughly chopped
8 oz Mozzarella cheese, cubed
1 c Grated Parmesan Cheese, divided

Recipe Directions for Italian Baked Penne--Kroger Cookbook

  1. Preheat oven to 425 degrees F.

  2. Bring water to boil in large pot of salted water. Add penne pasta and cook until al dente, about 8 minutes. Drain and return to pan.

  3. While pasta is cooking, heat large skillet over medium-high heat. Add sausage, onion and garlic and saute' until sausage is cooked through, breaking up meat with back of spoon, about 10 minutes. Add mushrooms and saute' 3 minutes. Add pepper, Italian seasoning and tomatoes to pan. Simmer, stirring occasionally, about 8 minutes.

  4. Combine sausage mixture to pasta, spinach, mozzarella cheese and 1/3 cup Parmesan cheese. Pour into 13 x 9 inch glass baking dish. Sprinkle remaining 2/3 cup Parmesan cheese over top.

  5. Bake 15 minutes or until cheese is melted and sauce is bubbling.

  6. Serve with a Kroger Fresh Selection Salad with Kroger Balsamic Vinaigrette.

  7. Store any leftovers in Kroger Reusable/Disposable Containers in the refrigerator.
