Recipe Ingredients for Italian Baked Chicken and Pastina

2 cups Macaroni, dry enriched
2 tbsp olive oil
2 cups chicken breast, boneless, skinless, cubed
3/4 cup onion, diced
2 clove garlic, minced
14 1/2 ounce diced tomatoes with juice
1 cup mozzarella, shredded
1/4 cup fresh flat-leaf parsley, chopped
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/4 cup bread crumbs
1/2 cup Parmesan cheese, grated
1/2 tbsp butter

Recipe Directions for Italian Baked Chicken and Pastina

  1. Preheat oven to 400 degrees F.

  2. Bring a medium pot of salted water to boil over high heat.

  3. Add the pasta and cook until just tender, stirring occasionally, about 5 minutes.

  4. Drain pasta into a large mixing bowl.

  5. Meanwhile, put the olive oil in a medium saute pan over medium heat. Add the chicken and cook for 3 minutes.Add the onions and garlic, stirring to combine, and cook until the onion is soft and the chicken is cooked through, about 5 minutes more.

  6. Put the chicken mixture into the pasta bowl.

  7. Add the canned tomatoes, mozzarella cheese, parsley, salt and pepper. Stir to combine.

  8. Place the mixture in a buttered 8x8 2 inch baking dish

  9. In a small bowl, mix together the bread crumbs and the Parmesan cheese.

  10. sprinkle over the top of the Pasta mixture.

  11. Dot the top with small bits of butter.

  12. Bake until the top is golden brown, about 30 minutes.
