1 cucumber
2 tomatos
1/2 red onion
1 tbs apple cider vinegar
1 freshly squeezed lemon juice, salt and pepper to taste

Chop everything into small cubes, add vinegar, lemon juice, salt and pepper. Can be shared by about 3 or 4 people.
