Israeli Couscous with Veggies & Tofu

Recipe Ingredients for Israeli Couscous with Veggies & Tofu

1 cup israeli couscous
1/2 cup broccoli
3/4 cup carrots
3/4 cup cauliflower
1 tsp olive oil
3/4 cup cherry tomatoes
4 2/5 oz tofu
1 tsp olive oil
3 scallions
1 tsp olive oil
2 tsp red wine vinegar

Recipe Directions for Israeli Couscous with Veggies & Tofu

  1. Combine israeli couscous with broccoli and carrots.

  2. Roast cauliflower with 1 tsp olive oil in oven for 45 minutes at 375 degrees. Add to mixture

  3. Quarter cherry tomatoes and add to mixture

  4. Saute tofu with 1 tsp of olive oil until tofu is slightly browned. Add to mixture after cooling for 10 minutes

  5. Add scallions, remaining 1 tsp olive oil and red wine vinegar to taste. Salt and pepper if needed.

  6. 1 serving = 1 cup prepared
