From Veganomicon, p. 117. The original recipe calls for 1/4 c fresh mint, which was omitted here. (That should be added with the apricots and pistachios, if using.) We added 2 tbsp milled flax seed to the recipe, but excluded that from the ingredients.

Recipe Ingredients for Israeli Couscous with Pistachios and Apricots

2 tbsp canola oil
6 garlic cloves, minced
2 c Israeli couscous
2 1/2 c water
1/4 tsp or 1 cinnamon stick
1 tsp ground cumin
1/4 tsp ground cardamom
1/2 tsp salt
1 lime, grated for zest and juiced
1/2 c dried apricots, chopped
1/2 c shelled pistachios

Recipe Directions for Israeli Couscous with Pistachios and Apricots

  1. Preheat a large skillet over medium-low heat. Place the garlic and oil in the pan and saute for 1 minute. Add the couscous, raise the heat to medium, and stir constantly for 4-5 minutes; the couscous should start to toast.

  2. Add the water, cinnamon stick, cumin, cardamom, salt, pepper (opt), and lime zest. Raise the heat and bring to a boil. Once the mixture is boiling, reduce the heat as low as possible and cover.

  3. In about 10 minutes, most of the water should have been absorbed. Add the apricots, pistachios, and juice from 1/2 lime. Stir, cover again, and cook for 5 more minutes. At this point, the water should be thoroughly absorbed.

  4. Remove the cinnamon stick, fluff the couscous with a fork, and serve.
