garlic eggplant dip from 3 eggplant makes 2 cups (8 1/4 cup servings)

Recipe Ingredients for israel salad

1500 g raw eggplant (roasted and drained)
2 tbs light mayonaise
1 tsp garlic
1 tbs tahini

Recipe Directions for israel salad

  1. roast eggplants

  2. drain soft parts

  3. mash with fork

  4. add mayo, tahini, salt, and garlic

  5. Chill and serve!

  6. makes 8 servings (1/4 cup)
