Saute only onion in butter if using diced green chiles.

Recipe Ingredients for Isolde's Corn Casserole

1/2 cups Yellow Corn Meal
1/2 cup All Purpose Flour
1/4 cup Sugar
1/2 T Baking Powder
1/4 t Salt
8 T Butter
1 large Onions
1 Green Pepper or 1 C Diced Green Chiles
2 lbs. Frozen Corn
1 cups Half and Half or Milk
3 Eggs
12 ounces Shredded Cheddar Cheese

Recipe Directions for Isolde's Corn Casserole

Saute the onion & pepper in butter. Set aside to cool. Meanwhile, put the eggs, corn & milk in a bowl & mix well. Add the corn muffin mix & mix very well. Add the butter, onion & pepper mixing well. Put into greased glass pan & top with cheese richly. Bake at 375 degrees for 40 to 45 minutes until a toothpick comes out clean but not dry.
