A great salad to serve with your favorite Carribean- influenced main dishes

Recipe Ingredients for Island Slaw

1/2 lb cabbage, green, shredded
1/2 lb cabbage, purple, shredded
2 c. lettuce, shredded
1 c. shredded carrots
1 c. pepper, red, julienne cut
1 tsp garlic, minced fine
4 tsp chives, chopped
1/4 c. cilantro, chopped
1/4 c. vinegar, rice vinegar (mirin)
1 tbsp olive oil, extra virgin
1/4 c. Light Mayonnaise
1 tsp salt, pepper
1 c. papaya, diced

Recipe Directions for Island Slaw

  1. In small bowl wisk together vinegar, oil, mayo, garlic, chives, salt, pepper.

  2. In large bowl combine all vegetables.

  3. Pour dressing mixture over vegetables and mix well.

  4. Best prepared 1 hour before serving.
