Recipe Ingredients for Island Pork Tenderloin Salad

2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon cinnamon
2 3/10 lbs pork tenderloins
2 tablespoons olive oil
1/2 cup dark brown sugar
2 tablespoons garlic
1 tablespoon Tabasco
3 tablespoons fresh lime juice
1 tablespoon fresh orange juice
1 tablespoon Dijon mustard
1 teaspoon curry powder, toasted
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup olive oil
2 oranges
4 cups lettuce
1 yellow bell pepper
1 cup jicama
1 avocado

Recipe Directions for Island Pork Tenderloin Salad

  1. Used 1/2 cup sugar for glaze (instead of 1)

  2. Didn't have spinach or cabbage, so used regular green and red leaf lettuce and added jicama for crunch.
