Caribbean Islanders love their food nice and spicy. This dish combines the celebrated herbs of Provence - rosemary and thyme - with island-hot cayenne, black pepper, and garlic. Quickly cooked in a hot skillet atop the stove, these shrimp make a great appetizer. Serve with a splash of fresh lime juice to cool things down a bit. Jumbo shrimp are very delicious and dramatic but feed fewer and require a longer cooking time than large shrimp. When cleaning the shrimp, remove the vein along the back side, and the shrimp will fan out nicely when they cook.

Recipe Ingredients for Island Pan-Barbecued Shrimp

1 pound large shrimp, peeled and deveined, tails left on
2 tablespoons olive oil
1 tablespoon garlic, minced
1 tablespoon fresh rosemary leaves, chopped
1 tablespoon fresh thyme leaves, chopped
1/2 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
134 g lime, 2 limes halved

Recipe Directions for Island Pan-Barbecued Shrimp

  1. Combine the shrimp with the oil, garlic, rosemary, thyme, both peppers and the salt. Let marinate at room temperature for an hour.

  2. Heat a dry nonstick skillet over medium-high heat until hot. Lay the shrimp in the pan and cook, turning once, for 4 - 8 minutes depending on the size of the shrimp. They should be just cooked through.

  3. Brush the shrimp with the remaining marinade before turning.

  4. Serve with lime halves alongside.
