I originally got this from the Food Network, it's a Sandra Lee recipe. However, I use Splenda brown sugar instead of regular brown sugar. I'm looking for other ways to bring down the calories without reducing the flavor. The ingredients are not easy to find but it is easy to make. Just time it carefully or it'll burn.

Recipe Ingredients for Island Bread Pudding

1 pound Hawaiian Bread, cut into 1-inch cubes (recommended: King's)
1 cup pineapple chunks, drained (recommended: Dole)
7 ounce dried tropical fruit trio (recommended: Sun Maid)
12 ounce coconut milk (recommended: Thai Kitchen)
1 cup Kern's Pineapple Mango nectar
1/2 cup Splenda brown sugar
3 large eggs
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
2 tablespoons butter, cut into small pieces

Recipe Directions for Island Bread Pudding

  1. Spray the inside of a 4 or 5-quart slow cooker with butter-flavored cooking spray.

  2. In a large bowl, combine bread cubes, pineapple, and dried tropical mix.

  3. In a medium bowl, whisk together coconut milk, rum, nectar, sugar, eggs, cinnamon, and salt. Pour over bread mixture. Stir until well combined and bread is saturated.

  4. Transfer to slow cooker. Dot with butter. Cover and cook on low setting for 3 to 4 hours.
