Tuna Burgers with chile sauce and grilled pineapple

Recipe Ingredients for Island Ahi Burgers with Cilantro-Chile-Lime Sauce

1 Green Chile Peppers
56 grams hellmans light mayonnaise
3 tbsp Light Sour Cream
3 tbsp cilantro, finely chopped
2 tbsp lime juice, fresh squeezed
2 tbsp ginger, minced
2 tbsp garlic, minced
1/4 tsp salt
4 tsp low-sodium soy sauce
1/2 tbsp sesame oil
1 tsp lime zest, fresh grated
1/2 tsp crushed red pepper flakes
16 ounces Fish, Tuna, Fresh, Yellowfin, Ahi
1 large yellow onion, sliced thick
4 thick slices pineapple

Recipe Directions for Island Ahi Burgers with Cilantro-Chile-Lime Sauce

  1. Sauce: Char peppers over gas flame or under broiler until blistered on all sides. Enclose in a paper bag and let stand 15 minutes. Peel peppers, remove stem and seeds, and dice. Measure 1/4 cup diced peppers into a small bowl and add mayonnaise, sour cream, cilantro, lime juice, ginger, garlic, and salt; stir well.

  2. Burgers: Meanwhile, in large bowl, mix soy sauce, sesame oil, ginger, garlic, lime juice and zest, and red pepper flakes. Add ahi and let marinade 15 minutes.

  3. Heat grill to medium-high heat. Grill onion and pineapple slices until they have grill marks. Add tuna and cook 3 to 4 minutes per side. Toast rolls under broiler during last few minutes of cooking. Spread sauce on roll bottom and top with grilled onion and pineapple slices.
