A slight variation of the vegetable pasta dish from The Irregardless Cooks cookbook, by Arthur Gordon, 1982.

Recipe Ingredients for The Irregardless Cooks' Cauliflower Fettuccine

2 cup cauliflower
1 cup onion
1 cup carrot
1 cup green pepper
2 cup Swiss cheese
2 cup soy milk
3 tbsp butter
3 tbsp all purpose flour
1/4 tsp pepper
1/2 tsp salt
1/2 lb noodles
1 1/2 tbsp coconut oil

Recipe Directions for The Irregardless Cooks' Cauliflower Fettuccine

  1. Boil noodles to al dente, drain, set aside.

  2. Blanch cauliflower and carrots. Drain, set aside.

  3. Saute onions, green pepper. Add blanched veggies. Stir and set aside.

  4. Melt butter in a saucepan. Add flour and whisk to break clumps. Pour in the milk and cook until reduced over medium heat. Add Swiss cheese, salt, and pepper. Remove from heat.

  5. Mix noodles, vegetables, and sauce and put into a lightly oiled two quart dish. Bake at 350 for 20 mins. You can also toss the noodles and veggies into the sauce immediately and serve.
