Recipe Ingredients for Iron skillet cornbread

1.25 cup Cornmeal, Whole-grain, Yellow
0.75 cup Wheat Flour, Whole-grain
3 tsp Sugars, Granulated
1 dash Salt, Table
2 tsp Baking Powder
0.5 tsp Leavening Agents, Baking Soda
2 tbsp Rosemary, Fresh
2 large Egg, Whole
1 cup Milk, Lowfat, Fluid, 1% Milkfat
1 tbsp Vinegar, Cider
0.25 cup Olive Oil
30 grams Asiago Shredded Cheese
0.67 cup Corn, Sweet, Yellow
1 tbsp Olive Oil

Recipe Directions for Iron skillet cornbread

  1. Preheat oven to 425 degrees and place 9 to 10 in cast iron skillet inside to heat for at least 15 minutes.

  2. In a large bowl, stir together dry ingredients.

  3. In a separate bowl, beat eggs and whisk in buttermilk with 1/4 cup olive oil.

  4. Add wet ingredients to dry ingredients along with cheese and corn.

  5. Remove skillet from oven. Add remaining 1 tbsp olive oil to skillet; swirl to coat bottom and sides. Spoon batter into hot skillet, place in oven, reduce temperature to 400 degrees and bake until golden, about 20 minutes.

  6. Remove from oven and let cornbread cool in skillet for 5 minutes, then turn out on to cutting board. Cut cornbread into wedges and serve warm.
