Irish Soda Bread Recipe

A quick bread that is great with a pat of butter. Or plain with a cup of coffee or tea.

Recipe Ingredients for Irish Soda Bread

6 tbsp butter
3/4 cup sugar
2 eggs
1 tbsp baking powder
1/4 tsp baking soda
3/4 tsp salt
2 cups whole wheat flour
1 1/2 cups buttermilk
1 cup flour
1 cup currants
1 tsp caraway seed

Recipe Directions for Irish Soda Bread

  1. Beat sugar and eggs together. Add eggs and beat till lemon colored and creamy. Add salt, baking powder and baking soda. Mix briefly

  2. Add 1 cup whole wheat flour. Blend. Add half of buttermilk. Blend. Add 2nd cup of flour. Blend. Add remaining buttermilk. Blend. Stir in final cup of flour and mix till smooth. Stir in currants and caraway seeds.

  3. Turn dough into prepared pan (round with 3 in sides, or loaf pan). If desired. drizzle 1 tbsp milk over top and sprinkle with coarse sugar.

  4. Bake 45 minutes - 1 hr 15 minutes, depending on your pan. When tester tests clean, remove from oven. Allow to cool about 10 minutes before removing from pan. Cool on rack. Let sit at least one hour before serving.
