Great for St. Paddy's Day. Not the lightest thing on the menu :)

Recipe Ingredients for Irish Potato Rolls

1 cup Boiling Water
1/2 cup Water (Lukewarm)
3/4 cup Unsalted Butter
1 cup Flour
1/2 cup Sugar
1 cup Mashed Potatoes
3/4 teaspoon Salt
2 Eggs (Beaten)
1 package Yeast (Red Star)
5 cups Flour

Recipe Directions for Irish Potato Rolls

Soften yeast in the 1/2 cup lukewarm water. Combine boiling water, butter, sugar and salt. Cool to lukewarm. Mix the 2 together. Add 1 cup flour, mashed potatoes and eggs. Mix to smooth batter. Let rise for 2 hours until the batter is light and bubbly. Add remaining flour to make a soft dough. Knead lightly on a floured surface. Let rise again in a greased bowl about 2 hours in a warm place. Form dough into rolls of the desired size. Arrange in a greased pan and let rise again until doubled in size. Bake in a 350 oven for 20 to 25 mins.
