Succulent rich oyster stew that my grandmother used to make. Once you tried it you will understand why potatoes and oysters are so good together

Recipe Ingredients for Irish Oyster Stew

8 oz Onions
9 1/2 oz Celery
2 slices Kirkland, Maple Bacon
2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
12 oz Potatoes
3/4 can (12 oz), oysters and liquid Oyster, Eastern, Canned
10 oz Potatoes
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 cups water

Recipe Directions for Irish Oyster Stew

Finely chop onions, celery, and bacon and sweat them in a stock pot. Add milk, I prefer soured 2% or buttermilk and simmer with the first batch of potatoes. When potatoes are softened stick blend until smooth. Add oyster juice, chopped oysters, chopped bell pepper, and second batch of potatoes. simmer for 10 minutes and serve.
