Recipe Ingredients for Irish Lamb Stew - Slow Cooker

1.14 lbs. lamb stew meat
1.18 lbs. red potatoes, cut into chunks
4 medium carrots, chopped
1 medium onion, chopped
2 cloves garlic, minced
1 small turnip, diced
2 tbsp. tomato paste
32 oz. vegetable broth
1 tsp. dried thyme
1 tsp. dried rosemary
1/2 tsp. pepper
1/4 cup white flour

Recipe Directions for Irish Lamb Stew - Slow Cooker

  1. Brown the meat in batches.

  2. Place the vegetables into the bottom of a slow cooker, and add the meat and seasonings. Add the tomato paste and broth.

  3. Cook on LOW for 6 to 7 hours.

  4. If you prefer the stew thickened, mix the flour with some water to make a slurry, stir it the stew half an hour before end of cooking. Season with salt and pepper to taste.
