Irish Brown Bread Recipe

Makes 12 servings



Traditional brown soda bread. I use Graham flour (whole grain) for this, you can also add 1/2 cup of wheat germ for more bulk.

Recipe Ingredients for Irish Brown Bread

2 cups whole wheat flour
2 cups all purpose flour
1/4 lb butter
1 tsp salt
1 tsp baking soda
1/2 tsp cream of tartar
1 tsp sugar
2 cups buttermilk

Recipe Directions for Irish Brown Bread

  1. Whisk together dry ingredients.

  2. Cut butter into flour with pastry mixer or fingers until well incorporated. The mixture should look like corn meal.

  3. Make a well in the mixture and pour in buttermilk. Mix until fully incorporated. Tuen out mixture to a floured surface and knead for 5 minutes.

  4. Form into a round loaf and place on a buttered pan. Pan should be 9 inches around or larger. Make a 1/2 inch deep "X" across the top.

  5. Cook in a 400 deg. oven for 30-40 minutes, until the loaf sound hollow when tapped.
