Recipe Ingredients for Inspired by Dreena's Banana Oat Muffins

3/4 cup quick oats
3/4 cup quick oats, ground
1/8 cup sugar-free maple syrup
1/4 teaspoon sea salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg, ground
1 tsp baking powder
1/2 cup banana, puréed (overripe)
1/2 cup blueberries, chopped
1/8 cup egg whites
1 tsp pure vanilla extract
2 tbsp smart balance
1 tbsp unsweetened apple sauce

Recipe Directions for Inspired by Dreena's Banana Oat Muffins

  1. Preheat oven to 350°F (176°C).

  2. In a large bowl, combine the oats, ground oats, sugar, sea salt, cinnamon, and nutmeg, and sift in the baking powder.

  3. Stir through until well combined.

  4. In another bowl, combine the puréed banana, vanilla, and butter, and egg whites stirring through.

  5. Add the wet mixture to the dry mixture, and stir through until just well combined.

  6. Fold in blueberries.

  7. Drop large spoonfuls onto a baking sheet lined with parchment paper.

  8. Bake for 12-15 minutes, until lightly golden.

  9. Remove from oven and let cool on pan for 1 minute, then transfer to a cooling rack.
