Easy skillet version of stuffed peppers with sausage and rice.

Recipe Ingredients for Inside-Out Stuffed Peppers

3 serving Pork, Sausage, Bulk/links/patties
2 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 slice, large (1/4" thick) Onions
1 cup Quick Cooking Wild Rice
1 tbsp Extra Virgin Olive Oil
2 cup, pieces or slices Mushrooms

Recipe Directions for Inside-Out Stuffed Peppers

  1. Cook the rice according to package directions. Set aside.

  2. Remove casings from sausage. Brown in half the olive oil. When browned, scoop sausage out of pan and add to the rice.

  3. Add remaining half of olive oil to pan and add the vegetables, sauteeing until done (5 min for crisp texture, 10 for softer).

  4. Add rice and sausage mixture to vegetables. Serve and enjoy! Serves four.
