Recipe Ingredients for Inside-Out Lasagna

8 oz. whole wheat rotini
1/2 lb ground beef
1 onion, chopped
3 cloves garlic, sliced
8 oz. sliced white mushrooms
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
28 oz. diced tomatoes
8 cups baby spinach
1/2 teaspoon crushed red pepper
3/4 c. low fat cottage cheese

Recipe Directions for Inside-Out Lasagna

  1. Cook pasta. Drain.

  2. Cook meat, onion, garlic in skillet over medium heat. Add mushrooms, salt and pepper and cook, stirring until the mushrooms release their liquid.

  3. Add tomatoes, spinach and crushed red pepper. Increase heat to medium-high and cook, stirring once halfway thrugh, until spinach is wilted, abour 4 min.

  4. toss the sauce with the pasta and add cottage cheese. Divide among 4 bowls.
