Recipe Ingredients for Insalata primavera

2 tbsp red wine vinegar
1 tsp dijon mustard
6 tbsp extra-virgin olive oil
8 oz salad greens
1/4 red onion, thinly sliced
1/2 c cherry tomatoes, halved
4 oz light cheese
2 tbsp capers, drained and rinsed

Recipe Directions for Insalata primavera

  1. Whisk red wine vinegar, mustard and oil until emulsified.

  2. Toss salad greens, onion, tomatoes, cheese and capers.

  3. Add vinaigrette to taste and gently toss.

  4. Season with salt and pepper to taste.

  5. Serve immediately.
