Recipe Ingredients for Insalata di Patate

2 1/4 lbs new potatoes
6 eggs
1/2 cup capers
2 cups celery
1 cup white onion
1 cup extra virgin olive oil
1 tablespoon mustard powder
5 1/2 tablespoons lemon juice
1/2 teaspoon white wine vinegar
2 dashes Tabasco

Recipe Directions for Insalata di Patate

  1. Scrub the potatoes. Put them into a large pot of cold water and

  2. gently boil until they are tender when tested with the tip of a small

  3. knife; do not overcook. Let cool, then peel off the skins; cut the potatoes

  4. into chunks about 3/4 inch square.

  5. While the potatoes are cooking, prepare the eggs. Put them in a

  6. medium saucepan, cover with cold water, and bring to a boil. When

  7. the water boils, cover the pan with a lid and remove it from the heat.

  8. Let stand for 20 minutes; then pour off the hot water and fill the pan

  9. with cold water. Tap the eggs just hard enough to crack them and leave

  10. them in the cold water. When ready to use the eggs, peel them. Cut 5 of the eggeggs into 3/4 inch pieces; cut the remaining egg into 6 wedges.

  11. Put the rinsed capers in a small bowl and cover them with cold water.

  12. Leave for 20 minutes; then drain them and dry them on paper towels.

  13. In a large bowl, combine the potatoes, the 5 cut-up eggs, the

  14. capers, celery, and onion, separated into rings. Toss lightly to mix.

  15. To prepare the dressing, put the olive oil in a small bowl. Whisk

  16. in the powdered mustard, lemon juice, vinegar, Tabasco, salt and

  17. pepper until the dressing is smooth and amalgamated. Pour the

  18. dressing over the salad and toss thoroughly but gently. Arrange the

  19. egg wedges on top like spokes. Cover and refrigerate until slightly

  20. chilled before serving.
