lentils and rice with sauteed onions

Recipe Ingredients for Injudra

8 oz lentils, dry
64 oz vegetable broth
1/4 cup onion
1 cup rice, dry
1 tsp extra virgin olive oil
2 tbs olive oil
4 onions, red, large, chopped

Recipe Directions for Injudra

  1. Heat olive oil in pan.

  2. Add onion and lentils. Cook until onions are soft.

  3. Add broth and bring to a boil.

  4. Add rice and reduce heat to a simmer.

  5. Cook until lentils are soft and rice is cooked.

  6. In separate pan, add olive oil and onions, cook until onions are brown. Put onions on top of lentils and rice and serve
