Recipe Ingredients for indy's potato salad

4 pounds potato, skin on
8 eggs
1/2 cup mayonaise, with olive oil
1/3 cup mustard, yellow
2 tablespoons pickle juice
2 teaspoons salt
1 teaspoon pepper
1 cup pickles, chopped
1 cup olives, chopped
1/2 cup onions, chopped
1/2 tablespoon paprika, smoked

Recipe Directions for indy's potato salad

  1. boil potatos till tender, about 20-30 minutes

  2. boil eggs 10 minutes, peel

  3. smash potato and eggs together until almost smooth

  4. add mayo, mustard, pickle juice, salt and pepper

  5. stir till well combined

  6. add pickle and olive and onion

  7. stir

  8. smooth out top and sprinkle paprika over top.

  9. cover and chill 2-3 hours or until cool.
