Recipe Ingredients for indy's curries- sesame carrot with coucous

1 tablespoon sesame oil
1 tablespoon sesame seeds
2 pounds carrots
1 tablespoon ginger, grated
1 1/4 cup garbanzo beans, canned or cooked
14 ounces Lite Coconut Milk
2 tablespoons curry paste
1 1/2 cup water
1 cup cous cous

Recipe Directions for indy's curries- sesame carrot with coucous

  1. heat oil ober medium heat

  2. add sesame seeds and toast

  3. add carrots and ginger

  4. cook uncovered 5 minutes stiring occasinally

  5. cover and cook another 10 minutes or until fork tender, stiring occasinally

  6. add garbanzo beans, coconut milk, curry and water stir

  7. bring to a low boil

  8. stir in cou cous

  9. cover and turn off burner

  10. let sit 5 minutes

  11. check that cous cous is tender, if not cover another 5 minutes

  12. salt and pepper to taste and serve
