Sweet and Spicy Corn Fritters with TONS of flavor!

Recipe Ingredients for Indonesian Corn Fritters

1/2 cup Lemongrass, Chopped
2 T ginger, minced
1 T galangal, minced
2 T Shallots
1/4 c Millet
3 ears corn, shucked
2 egg whites
1/2 cup Whole Wheat Flour
1/4 cup Scallions
1/4 cup Sweet Chili Sauce

Recipe Directions for Indonesian Corn Fritters

  1. Directions

  2. Blend Lemongrass, ginger, galangal and shallots in a food processor until coarsely blended. Add 1 cup of corn kernals and blend until a paste forms. Transfer mixture to a bowl and stir in remaining Corn. Stir in egg whites. Fold in the Flour with a spatual. Refrigerate for 10 minutes.

  3. Meanwhile, heat 4 Tbsps olive oil in a pan. Prepare wire rack over a baking sheet to drain the fritters. When oil is hot, drop spoonfuls of fritter mix into skillet. Fry 1 minute or until golden brown on each side.

  4. Drain fritters and serve immediately. Top each fritter with a small dollop of Sweet
