Could use prebaked personal size pizza crust or tortilla too; just aim for 200 calories or less for your crust to keep your total under 400. Switch up the veggies, add a sprinkle of bacon or try ham, swiss and spinach for something different. Please note, I have an old oven, and I'm never sure that the temp is accurate. I should invest in a thermometer. Please rely on food temperature and appearance to make sure food is done.

Recipe Ingredients for Individual Pita Pizza

1 pita bread
1/8 c red bell pepper
1/8 c red onion
1/8 c mushrooms
1 T jalapeno
1/3 c shredded cheddar
1 T shredded cheddar
1 egg
1 T milk
1 pinch salt

Recipe Directions for Individual Pita Pizza

  1. Preheat oven to 375. Line cookie sheet with parchment paper.

  2. Place crust on lined cookie sheet and top with bell peppers, onion, mushroom and 1/3 c cheese. Be sure to leave 1/2 inch edge bare.

  3. Whisk egg, milk and salt till well combined. Carefully pour over cheese and veggies. Top with 1 T cheese and jalapeno slices, if using.

  4. Bake for 10 min, or until egg at edge of pizza has set. Slide pizza from cookie sheet to oven rack. Continue to bake till egg in center of pizza is set and cheese around the edge begins to brown.
