Chocolate souffles (kind of like costco brownies)

Recipe Ingredients for Individual Chocolate Souffles

10 ounces chocolate, semi-sweet chopped
4 egg yolks
2 tbsp vanilla extract
1 tbsp unsalted butter
6 egg whites
1 pinch cream of tartar
1 pinch salt

Recipe Directions for Individual Chocolate Souffles

  1. 1. Preheat oven to 400 degrees F. Butter 4-8 oz souffle cups and sprinkle with sugar.

  2. 2. In a metal bowl over a pot of hot water (not simmering), melt the chocolate, stirring until smooth.

  3. 3. Remove bowl from heat and whisk in the egg yolks, one at a time.

  4. 4. Whisk in the vanilla and butter.

  5. 5. In a bowl with an electric mixer, beat the egg whites (6) with the pinch of cream of tartar and a pinch of salt until they hold stiff peaks.

  6. 6. Stir one fourth of the whites into the chocolate mixture and then fold in the remaining whites gently but thoroughly.

  7. 7. Spoon the mixture into 2 (1 cup) souffle dishes that have been buttered and sprinkled with sugar.

  8. 6. Bake the souffles on a baking sheet in the middle of the preheated oven for 10-12 minutes, or until they are puffed.
