Note: Sugar is not listed in this ingredient because everyone prefers different types of sugar. I use calorie free sweetener, but please feel free to use sugar, in any form, to your preference. The amount of sugar for this recipe is 2/3 to 1 cup, but feel free to experiment!

Recipe Ingredients for Individual Cheesecake Bites

16 oz Fat Free Cream Cheese
120 g Grahams Honey Low Fat
3 tbsp Imitation Honey
2 large Egg, Whole
1 tsp Vanilla Extract
0.01 cup Lime Juice

Recipe Directions for Individual Cheesecake Bites

  1. Preheat your oven to 300 degrees F. Get your muffin tin ready and line them with paper cups. I used a 24 mini muffin tin.

  2. Get seven squares of graham crackers and crush them until fine. Feel free to put them in a food processor.

  3. In a microwaveable bowl, put three tablespoons of honey and place into the microwave for about thirty seconds or until runny. Put your fine graham cracker crumbs and stir! Make sure the mixture is sticky, but not too sticky that it'll be hard to work with. Feel free to taste the mixture and adjust the sugar.

  4. In a large bowl, place 16 ounces of room temperature cream cheese. If your cream cheese isn't room temperature, just put it in the microwave for about 30 seconds until malleable.

  5. Whisk in 2/3 of your sweetener of choice into the cream cheese.

  6. Whisk in two eggs, one at a time into the cream cheese mixture.

  7. Then add in the vanilla, lime juice (or lemon juice, if you prefer), and the yogurt. Mix until consistent.

  8. Now for assembly! First, take a small spoon and put in a small amount of graham cracker into each liner. Fill the liner until you can't see the bottom and press down if you wish. The amount of graham crust should be about a teaspoon or two, but it is entirely up to you.

  9. Next, add a tablespoon of cream cheese into each cup. Now, a tablespoon should fill it up perfectly. Don't worry about adding too much! They don't rise, but after cooling, they do flatten out.

  10. Put into your oven and bake for 18-22 minutes. If you bake for 30 minutes, you will have a nice golden edge and a rustic crack at the top. The cream cheese center will not have set so let it cool.

  11. You can top these with whatever you want! If you want a splash of fruit in order to cut through the decadence of the cheesecake without actually having to use fruit, feel free to take your favorite jam, spoon out a little bit, and melt it in the microwave. Then spread it on the mini cheesecake for a delicious bite!
