Recipe Ingredients for Indian Vegetables

2 tablespoon extra virgin olive oil
3 cloves garlic
1 medium onion, sliced
1 green pepper, chopped
3 yukon gold potatoes, chopped
1 small eggplant, chopped
1 1/2 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon garam masala
1 cup cauliflower, chopped
1 cup carrots, chopped
1 cup green beans, sliced
1 cup celery, sliced
1 zucchini, chopped
1 yellow squash, chopped
1 cup cabbage, chopped
1 1/2 cups water

Recipe Directions for Indian Vegetables

  1. In a large pot, heat olive oil.

  2. Add garlic, onion and green pepper and cook until soft

  3. Stir in potatoes and eggplant

  4. add turmeric and mix until vegetables are covered with turmeric sauce.

  5. Add 1/4 cup water, reduce to low heat, cover the pot and cook for 10 minutes.

  6. Stir in cumin, coriander, garam masala and vegetables.

  7. Add 1 cup water and increase heat to medium.

  8. After 10 minutes, lower heat and cook until vegetables are tender.
