An Exotic Twist to Traditional Vegetable Stew

Recipe Ingredients for Indian Vegetable Stew

1 tbsp. Olive Oil
2 large Onions, coarsely chopped
4 cloves Garlic, minced
1 1/2 tsp. Cumin
1 tsp. Coriander
1/2 tsp. Cinnamon
1/4 tsp. Cardamom
1/8 tsp. cayenne pepper
1 lb sweet potatoes - quartered
1 1/2 c water
19 oz chick peas
14 oz crushed tomatoes
1 lb carrots, sliced
1/2 c fresh cilantro, chopped
32 oz vegetable broth (4 c)
3/4 c plain yogurt

Recipe Directions for Indian Vegetable Stew

  1. In skillet w/1 tbsp olive oil cook onion & garlic until tender

  2. Add all other ingredients except cilantro and yogurt to a 2 quart soup pot

  3. Bring ingredients to a boil and simmer 30-35 minutes or until potatoes and carrots are tender.

  4. Stir in cilantro.

  5. Serve in bowls and top with yogurt
